Jeff Volek and Eric Westman have done great work on showing what really happens when carbs are restricted to ketotic levels – the way the rules change. Fatty acids do different things, serum SFAs go down, membrane PUFAs are conserved. It’s in the Nutrition and Metabolism Society papers I think: http://www.nmsociety.org/low-carb-research.html
